Summer is officially here! It’s time to (responsibly) soak up some sun and have as much fun as possible in the great outdoors. Not just because there is so much fun to be had, but because if you live in Canada and do not take a supplement, you’re probably deficient in Vitamin D and that’s a big problem! Almost as big of a problem as being deficient in fun..
The best way to get Vitamin D is free. Get outdoors and soak it up! 10-15 minutes per day, without sunscreen. Use common sense: if you are super fair or have red hair, limit your exposure and avoid the sun if you burn easily. If you’ve got dark skin, you need more sunlight to make vitamin D.
If you’ve never had your Vitamin D level tested, consider it high time you did. Studies show the majority of us are lacking in this essential vitamin, putting us at a greater risk of cancer and hearth disease. A deficiency can weaken the immune system, result in poor bone health, insulin resistance as well as fertility problems in women with PCOS.
All this fun in the great outdoors is sure to work up an appetite. Here’s a recipe for a sweet summertime snack, packed with protein and antioxidants to keep the party going..
Mango Goji Suntini
Ingredients:
1 ataulfo mango, peeled and cubed
1 handful dried goji berries
3 Tbsp full fat unsweetened greek yogurt
About 1 cup cashew, almond or oat milk
1 Tbsp shredded coconut
Procedure:
1. Put it all in a blender.
2. Blend until it looks like liquid sunshine.
3. Pour into your favourite fancy glass.
4. Garnish with a few goji berries and shredded coconut.
5. Sip, baby, sip! Preferably in the sun.
