Loco Mojito Smoothie

Hola! It’s me again. I have another recipe for you. I’ve been neglecting this blogging thing for a while but suddenly have a renewed sense of excitement to create and share. Let’s see where this goes?

Perhaps it’s because my recent vacation was ultra soul soothing. I don’t know if it was playing in the waves for hours, planning my days around delicious tropical meals or wearing my favourite summer clothes but I just can’t wait for summer and I’m lusting over another beach getaway.

Unfortunately it’s March in Canada so we can’t put away our parkas just yet. To combat this unfortunate truth I’m mixing up mojitos for breakfast – minus the rum – hoping to infuse some sunshine and vacay vibes into my day.

So Mojitos. Yum, right!? They rival piña coladas as my favourite vacation cocktail but I’m also partial to the Coco Loco. What is this Coco Loco I speak of? Well, you literally put the lime in the coconut, with some other ingredients, and drink it all up. Then you eat the coconut. Or at least that’s how they do it at Bar Coco Loco where several young coconuts met their maker last week.

Young coconuts contain coconut water. It’s delicious. It’s also a spectacular source of electrolytes but unlike commercial sports drinks it doesn’t contain freaky food colouring, heaps of sugar or loads of sodium. In fact, coconut water contains a balance of sodium and potassium that’s similar to human blood plasma. It’s actually been used intravenously in emergencies when saline was unavailable. Now that’s loco!

Coconut water is an excellent beverage when you’re sweating a lot while exercising or surviving a heat wave. It’s also good for replacing the fluid lost when you have diarrhea and may help people with restless legs or cramps. I like to drink it all the time, on its own or in smoothies instead of a heavier nut milk or dairy – especially if I’m including avocado, which is oh so rich and creamy already.

The avocado and hemp seeds in this smoothie provide healthy fat and protein. Dates naturally sweeten it and mint makes it rock the boat.

Loco Mojito Smoothie

Recipe serves two. If blending for one, half the ingredients will do. Consume fresh.

Ingredients:

1 bunch of fresh mint with thick end of stems removed
juice of 1 lime freshly squeezed
1 granny smith apple cored and cut into 8-12 pieces
1 avocado peeled & pitted
3 medjool dates, pitted
2-4 Tbsp hemp seeds
2+ cups chilled unsweetened coconut water
a few ice cubes to make it extra refreshing

Instructions:

  1. Combine all ingredients in a blender.
  2. Blend until smooth.
  3. Sip and smile 🙂
